FAMOUS HUNGRY GHOSTS
Gaki Gaki is the Japanese term for 'Preta', the ghosts of greedy or wicked people sentenced to eternal torment.  Temperature extremes hurt them more than normal, even moonlight burns them.  They also have a supernatural hunger for some substance or object, and are never satisfied no matter how much of it they get.  Normally this isn't a problem as long as the hunger isn't for something objectionable like blood, human flesh, excrement, or sex.  Usually invisible they can appear as balls of smoke or fire, or use illsuions to cloak their real appearance: A skeletal, mummified corpse with a distended belly, long neck, and small mouth.  If all else fails they will resort to causing fear.
Gashadokuro Composite ghost formed from people who starved to death that stands fifteen times the height of a man.  It searches for humans to eat so it can incorporate their skeletons into it's own.  It can be defeated by listening to the voices ringing in your ears for they will tell you where a skull is buried.  The ghost will be destroyed if you shatter that skull.
Hone-onna Ghost who appears as a beautiful woman to seduce men before turning skeletal and sucking out their life force.
Isogaki Ghosts of shipwreck victims who cause victims to feel like they're starving.  They can be warded off by potatoes.
Itsumaden During a time of plague and starvation, many bodies were neglected and tossed outside the city.  Their ghosts formed a fire spitting birdlike monster with a 15 foot wingspan.  It looks like a serpent with a birds wings and talons, and a beaked human face.
Jiki-Ketsu-Gaki Greedy or jealous people reincarnated as mosquitoes.
Jikininki Greedy, selfish, or impious individuals cursed to eat corpses as ghosts.  They seem human by day but turn into ghouls with long claws and glowing eyes at night.
Jikitori Ethereal hungry ghost similar to the Middle Eastern Ghul.
Kubikajiri Head eating spirit that is the ghost of someone who has starved to death.
Kyonshi Japanese name for the chinese Jiang Shi (aka the Hopping Vampire).
Kyuuketsuki Japanese name for Western vampires.  It is a fairly modern introduction as Japan has no native vampire myths.

Hmm. Strange. I would expect them to be either generic bestiary entries or templates. Why did you decide to make them classes?

My favourite Japanese spirit is the one that turns into a wall and blocks alleys to mess with people who try to find their way home while drunk.

Also, in some legends, eating a mermaid's flesh can extend you life. One of the reasons they don't show up to humans much

There isn't a lot of info to go on for some of the monsters.  Some of them are pretty much lliterally what you see me write in the brief description.  Plus a lot of the Yokai have spiritual powers and even species like the Oni or Kappa vary heavily from story to story.  It seemed easier to make types of Yokai a class and then add maybe race entries for the ones that are widespread as opposed to just one-offs.  Or find a way to incorporate race into the class ala Oslecamo.

At the very least a bodhisattva should be a template. (From what I know, it is a guy who got to the point where he could stop reincarnating and leave the world behind, but decided to stay and help others as an Eastern equivalent of a saint. It is something that you are or you are not - I don't think it's gradable by levels)

I intend to put notes for each one on the average HD of monsters.  For example if the average adult Kappa is 6 HD, you desing it's racial abilities with 6 levels of that class.  Boddisatva are gonna start with a lot of HD minimum.
