It stopped making sense after the first one said "screw you time travel you are only a plot device"...

Well, there's that, but at least up to 2 there's a certain level of consistency. It's from 3 onwards that it becomes a clusterfuck.

Incidentally, I just discovered how the plot makes sense. Multiple timelines. Which Skynet somehow has access to.

Terminator films are like lesbian pillow fights.  You think going to one will be fun, but when you get there you think "Wow these women are big, and staring at me in an uncomfortable manner which suggests I don't belong.  I should have had the foresight to avoid this."

James Cameron has revealed a bit of relevant plot information that he wanted to put into the movies since the first Terminator, but just couldn't find a way to fit it in nicely.  Essentially, Skynet feels guilty for having killed 5 billion humans, who it is programmed to protect, which it had done only because they were trying to shut it down.  And so now it wants to basically commit suicide (self-terminate), but its programming will not allow this (just like the terminators can't), so it actually devised the whole plot to turn John Conner into its killer through the use of time travel.

Now, while this info does help explain why Skynet hasn't wiped out the human race and makes seemingly bad tactical decisions, I'm sure there's still a heluva lot of bad plot in the movies, especially after T2.

Ah-nohd version 6 (or 7 ?) coins a couple
of interesting points about time travel, like
certain events are larger than others and
are more immutable regardless of actions.

But personally I found the: 
"Grandfather paradox inevitable plot point"
to be boring by now, some 30+ years later. 
Completely blowing up that, with multiple
time loop-offs generated, equals lots of room
for sequels number 10 and 20.

It's kind of weird though: after he gets Terminatorized, John Connor says he CAN kill Sarah and Kyle because there is no fate, blahblahblah exiles in time.

But then, when he HOLDS HER HOSTAGE, he says he can't kill her because if he does, Pops is definitely going to blow the building to smithereens. Even though his only real weakness was magnetic fields.

So... why was it okay to grandfather paradox himself out of the organic component of his existence but not Skynet?

No, because t3 is about stopping John Conner's resistance (generals, etc) from being successful.
