Fighter 1 is a decent dip for anyone, more so you.

iirc the earliest Fighter Eldritch Knight handbooks
talk about Not using Int, as a workable possibility.

Leugren's list of spells got saved from the wotc collapse.
This one --->
and the one below it, don't require Int as much as other spells.
Rituals work too of course.

It may take a few more levels of Wizard to get a better
balance of spells, given your undead-y-ness.

yeah, Woodling is the easier version of the template I was aiming for. Kin'O' the Green from Bastion Press's Alchemy and Herbalist.  that template has 3 stages and at the end the character is a treant. ...

You could replicate the 3 stages by taking the Woodling LA+2 ~penalty earlier than ECL 8
then doing the first LA buy-off at level 8, and finishing the la buy-off at ECL 10.
But it's complicated exp math along the way = enough room to give trouble to inexperienced
players and experienced players who have a hard time with that math anyway.

If you can negotiate with the DM, take Woodling when the party reaches level 7.
Immediately do the first la buy-off, so you are 6 class levels + 1LA = you're the same
level as the rest of the party. Then do the second buy-off as normal, with various degrees
of ignoring the math weirdness from level 10 on up, you and your DM and the party all.
Do note:  this is doing the first one a level early and the 2nd one rather sloppy.
Hence negotiate.

...The party is large 6 people, no idea on there characters.

I only know one is going Vassal of Bahamut ...

While a Druid-druid is fun and all, with the Tier 1 coDzilla snorty roarty ...
I'd bet most of your group (and DM) aren't necessarily looking to wreck all things.

Knee-capping a Druid might just bring it in line with the whole group.
Druid 5 + Totemist 2 in whatever order / Woodling with my 2nd example / Holt Warden X
almost certainly drops you down to Tier 3-ish and you still may have to pull punches.
No natural spell feat (I grate my teeth just writing that).
Greenbound summoning feat fits your fluff and
helps with the not going straight druid wreck face. 
Have to stick with no in-combat healing routine though. 
Scroll of Cure Light Wounds could be available or crafted = more than enough.

Too bad they hafta sand off the "ps'rough" edges so much.
Love the Dis on Wis saves cantrip = exactly the sort of thing I've suggested.
Too bad it'll work on all the people (irl) who never buy the specific book.

PsyWar 10 the ~recharge even at max, is right about the difference
between a 1/3rd caster and a 1/2 caster's total spell slots.
Or say right at what a Warlock 2 can do throughout a day.

Nearly Moon Druid 20 's worth of temp hit points,
over and over, until everything is dead.
Oh and it's CR 4.

Got to see it.  Liked it on it's own, separate from the historical comics. 
I have most of those originals ... and it's very different.

Anyway, it's worth seeing.  Definitely NOT a classic Hollywood ending.
'Cept it's technically the halfway point.  It'll be interesting to see how
they make the Time Gem = the ~equal of the other 5 Gems, in terms of "the" plan.

1) ... Mellored posted a Vhuman Monk Open 10 with Alert , dex + dex ; for a pvp comp on wotc right before they poofed.  He explained his tactics, and no one bothered to take him on.
I countered that specific build (=metagaming) with a worked up Dex Barb 7 / early UA Swash 3 just to get  nearly equal on initiative+surprise ; hoping for enough hp to handle the stuns that did get through, and after the stunning is done, go with Adv and better damage.  Fight never happened.

That Monk build works from level 5+, and has a nasty trick at 11, especially for arena 1v1 fights.  I wouldn't bet on the Barb+Swash against that Monk.

2) ... the UA NPC article has an Alt Rolling detail that makes any Basic Rules npc considerably better.  It's technically Random class first, and only srd, And No Feats = sad panda.  Doing this with Frenzy Barb that blows frenzy right away, is possibly very strong ; it's also good for the cleric or wiz or base thief.  Not sure how well a kitted cleric or wiz is with your setting.

3) ... Volos has the few prebuilds.  Don't know if you wanna go that restrictive on the various classes.  A rogue Thief 13 might be a very sneaky way to (re-)Introduce higher level magic into the game.  Surprise surprise but otherwise vanilla rogue.

4) ... Sorc 3 / Lock 3 could get the Disguise all the time + Disguise kit going , with the Focus replacement Hat or Shard in XGtE ... from the stands , running Vicious Mockery.  Fighter feels bad and wants to know why?  Nobody knows.  King says fighter loses and the opponent hasn't even shown up yet.

Google changes their search algorithm every now and then.
The latest change looks quite beneficial.

"minmaxforum" and "minmaxboards" don't bring up "minmax boards is dead" at the top anymore.

Sever The Tie power in the 3.0 book, is specifically anti-Undead, and not updated.

Erudite is technically a variant Psion.  Get a Beguiler as the thrall = learn all those tasty spells cheap + easy.

Clairsentience ... I'd prefer an Ardent into Visionary Seeker with a psiotheurgist feat = corner case early access.

The 6 works like the Wiz Div 6 , but is based on slots instead of spells.
If there was some decent spell stack load out possible ... going 9 8 7 6 5 4 3 2 1 can happen.
Something weird like Order 6 / Wiz or Lore 14 , can put more variety into the slots.
White-room-ish , but there's some there there.

Probably not do able, is sticking VoA 1 ability on all those Enchantment stacks.
Something like Sorc 2 or 3 / Order X , could break down into a whole lot of Reaction Attacks.

Planescape had a thing, where there's a "Path" of ~belief that leads from the 1st level, on up to each 1's respective higher level.

Kinda a stairway to A heaven, and with differing forms of resistance to going the Wrong way.

A lesser Slaad Lord got flung onto the 1st level and polluted everything around it, and the local midlevel toughs couldn't get near it or they'd lose their LG-ness and they didn't want to do that, so they hired the PCs to go un-pollute that area.  Same thing could happen on one of the stairways above.  HELP people can't go all the way up now SOMEBODY DO SOMETHING !!!  I've got extra devotions I have to do from just talking to you to get you to do something I ~can't = Ugh!

And who doesn't like a Stole Your Facebook Data + Cheesecake story.
Wall Street for one.

WotC forums used Facebook for ~some of their forum handling.
I'm curious if they know yet, what happened to "their" (+"our") stuff.
