Spell Sunder? There is no spell with the word "Sunder" in its name that I'm aware of...

Anyways, I don't think its a dick move to sunder PC's equipment if they make no effort to protect it. It's only a dick move to go out of your way to sunder something (ie. item familiar).

Sundering isn't for PCs. It's for DMs. It takes someone with down-right system mastery to make sundering useful as a PC.

The only thing I can think of off the top of my head that specifically protects against sundering is 'make it out of adamantine', otherwise I've got nothing aside from 'generically high defences'.

why stop at adamantine, go for obdurium.

The above is more fun to read when you ignore the context of "psionic" power  :) aDMg nailed it as dimensional pocket (CPsi83). It keeps safe that genie's lamp or The One Ring that you've been questing for without the DM destroying it.

Have your full plate-wearing cleric take a feat and keep that divine focus safe. Have your full-plate wearing psy war get a chirurgery for it too. Then put your magic items under the armor (which can't be sundered). Psions have a similar ACF, but I don't recommend it. If you aren't a monk and your weapons aren't created on the spot (soulknife, psy war ACF, warlock, etc), riverine is a must.
How does this help when you need to currently use said item?

Hide the ring under a glove? Have a dozen necklaces to conceal the magic one. Wrap your feet in cloth to hide your boots.

Yeah... as far as I can see, this is useless for protecting anything that you actually rely on in combat, which is generally when you'll be most likely to get something sundered.
I don't pee messages into the snow often , but when I do , it's in Cyrillic with Fake Viagra.  Stay frosty my friends.

Can't you sunder spell component bags, bowstrings and quivers/arrows? Or even at low levels, sundering nonmagical equipment should be fine.

I saw sundering of holy symbols and spell component pouches used a few times to disproportionate effect. The main limit seemed to be people thinking of it as a viable option.

Of course I would see the same people who used it carrying 10 holy symbols and spell component pouches for their spellcasters. I expect overuse would set off a bit of an escalation that would only stop when sufficient magic came into play.

Because you're the DM and you accidentally let your characters have too much loot.

Because you're Sauron and Isildur cut the Ring off your finger.
Because you're using an alternate rules system like Armor as DR, where destroying the Armor gets rid of the DR.
Because your opponent has a double-bladed lightsaber.

Because your opponent just used his holy symbol to turn your undead minions and the DM rules that breaking the symbol ends the turning effect.
Because you're fighting a hydra and chopping off its heads uses the sunder rules.

Because you're breaking all your potential loot.
Because no one wants to look up the Hardness/HP of every object.
Because...just do damage dude. Like, to the bad guy. Instead of his stuff.
