I don't think anything removed the Fast Healing 20, or DR/Epic Paragon gives it.

If you apply Dragonborn last, shouldn't all of those AC bonuses and natural attacks go bye-bye as well?

A 3.0 Rakshasa advanced in any way to CR 50.  Back in 3.0 a 'blessed' crossbow bolt would instantly kill it if it struck the Rakshasa.

('Blessed' could be obtained from either bless weapon or by having greater magic weapon cast on the bolt by a good-aligned cleric.)

Rules are silent on Natural Weapons. A less rules oriented look at things might point out you don't lose limbs (you keep other forms of movement, sic wings) vs what is "usually" a Humanoid.

I could see a DM nix'ing a 21 tentacle abomination of science and magic pretty easy through through, for whatever that's worth.

then what is left? Are they still undead? Medium size? Speed? Those are all listed under most race's traits. There is no real guidelines for a default trait list.

I chose to draw the line at ability scores and abilities.

"Mechanics of Rebirth" on page 10 of Races of the Dragon is pretty detailed, in my opinion, as to what gets kept and what gets lost.  You keep your type, you keep your racial HD, you keep your speed(s), languages, favored class(es).  You lose this:

You lose all other racial traits of your original race, including bonus feats, skill bonuses, attack bonuses, save bonuses, spell-like abilities, and so forth.
If a human loses its bonus feat and skill points, seems pretty obvious (once again, in my opinion) that you'd definitely lose AC bonuses, fast healing, DR, etc.
