From MIC the Talisman of Undying Fortitude gives you all the benefits of being undead for 2 (or 3) rounds twice a day.  Swift action to activate.  They are unslotted, but need to be held.  They are pretty cheap, so buy 3 or 4 of them if you're that worried about it.  They will protect against anything requiring a Fort save, stun, paralysis, ability damage, negative levels, etc.

But they're unusable once you're stunned, since stun prevents the taking of actions.

The OP asked for "protection from stun" which is exactly what that item gives:  immunity to being stunned.  If you are looking for ways to stop being stunned once you already are, then that is entirely different.

This item requires you to play with a little foresight obviously, but since it is a swift action and lasts for at least a couple of rounds, it can still be very valuable.  But your mileage may vary depending on your tactics.

So you just want permanent, always on immunity to being stunned?

Yes; or something that I can use while stunned. (Third Eye Clarity that has been pointed out earlier, for example.)

There are a few ways to change your type to Elemental/Undead/Plant/Ooze (which are immune to both paralysis and stunning) If I remember, most of them take up a whole bunch of levels though.

While I would do that as a Gish, I promised the DM to refrain from Polymorph this time, though. (So as to not overshadow the rest too much.)

Well perhaps consider the Elemental Body spell from SpC.  It is level 7, lasts for hours / level.  You basically become an elemental, but you are not polymorphed nor does your type actually change.  You keep all of your normal stats and gear.  But you gain all of the usual immunities, such as to paralysis and stunning.  Choose Air as your element and gain a perfect fly speed.

Elemental Form, hhmmm.... I wonder why I never noticed that earlier. Awesome spell! It even allows me to cut down on the "Heart of XYZ" spells. Thank you, Ithamar!
