Undead Immunities, get a powerful Necromancer for; +4 Enhancement to Str, +10 to [Land] Speed, +4 to Initiative, +1d6 Cold with melee attacks, +2 to Natural AC, +4 to Turn Resistance (total +6), blows up when killed.
Mineral Warrior (underdark)
Burrow Speed equal to half land speed, DR 8/adamantine, +3 Natural AC, +2 Str, +4 Con, -2 Int (minimum 1), -2 Wis, -2 Cha.
Wild (Dragon #306 pg65)
+2 Str, -2 Int, -2 Cha, +5 to Speed, +1 Skill Point per level, +2 Racial on Listen/Spot, -2 to Bluff/Diplo/Sense.
Proto-Creature (Beastiary of Krynn, pg89)
+3 to Natural AC, +4 on saves to resist Mind-Affecting abilities, +4 Str, +2 Con, -2 Int, -4 Cha, and some other flavorful don't care stuff.
Dragonborn (RotD)
Low-Light Vision, Breath Weapon, Draconic Language, Dragonblooded, +2 Con, -2 Dex.
Water (UA/SRD)
Gain a Swim Speed Equal to your Land Speed, Dragonborn removes the rest but doesn't change Speed.
Orc (Core)
+4 Str, -2 Int, -2 Wis. -2 Cha, Dragonborn removes the rest but doesn't change Racial Ability Modifiers.
Martial (Dragon #208, pg46 I think)
Expands the Monk's Ignore-Prerequisite-Bonus-Feat-List to include any Fighter Bonus Feat, also adds Intimidate to Class Skill List. Take Weapon Supremacy(PHBII) for +1 to AC, +5 to all attacks after the first, and 1/round take 10 on an attack roll.
Monk (Core)
+2 all Saves, Bonus Feat (see above), +1 Attack per round on a Full-Round Action, always armed, Wis to AC.
Str: +16 = 4 (necro) + 2 (min) + 2 (wild) + 4 (proto) + 4 (orc)
Dex: -2 = -2 (born)
Con: +8 = 4 (min) + 2 (proto) + 2 (born)
Int: -8 = -2 (min) + -2 (wild) + -2 (proto) + -2 (orc)
Wis: -4 = -2 (min) + -2 (orc)
Cha: -10 = -2 (min) + -2 (wild) + -4 (proto) + -2 (orc)
Example Array (PB32): Str 34 (+12), Dex 12 (+1), Con -- (+0), Int 2 (-4), Wis 8 (-1), Cha 2 (-4).
