I have no beef with vegetarians.

As far as soups go, I recall the combination of carrot, celery, and onion as a base is a good start.  The Wikipedia article has me wondering if I should try a soup sometime.

And dammit, I'm hungry again!  *goes to forage*

really, really finely diced carrot, celery and onion is the base of pretty much all french soups.

a lot of italian ones too

My wife hasn't been feeling well for a while; tonight she made dinner for the first time in a couple weeks, and decided to go all-out.  She re-read the Hunger Games while indisposed, and decided tonight to try and replicate one of the Capitol meals from the book. 

The result was: chicken in an orange and tarragon cream sauce over jasmine rice; buttered peas and pearl onions; and flower rolls brushed with honey and orange.

Absolutely phenomenal.

Last night, my wife made possibly the best pizza either of us had ever eaten.  It was unbelievably good, and I will share the recipe with you folks because I like you.

Prep:
  • Grate a bunch of Romano and Grana Padano (or other Parmesan) cheese.  I dunno how much, she doesn't measure.
  • Crumble & brown some hot italian sausage (we used about 2.5-3 links) in a saute pan.  When you turn off the heat, add some chopped garlic so it warms but doesn't cook too much.
  • Parboil some green kale in salted water for 2-3 minutes, then drain and pat dry as much as possible.  When it's dry, toss with oil, some of the grated cheeses, salt & pepper, and lemon zest.
Construction:
  • Prepare your pizza crust (we didn't have time to make or thaw, so we used a pre-made crust, and it was still delicious).
  • Spread crust with a thin layer of tomato paste, then sprinkle that with some of the grated cheeses
  • Layer the sausage & garlic mixture on top of the paste, and sprinkle with more of the grated cheeses
  • Crack 3-4 large eggs, spread out over the pizza.  Sprinkle the yolks with salt & pepper and a little romano
  • Layer the kale evenly over the sausage & eggs, and sprinkle with a little more grana padano
Finishing:
  • Bake until it's done as per your crust.  We did 450 ºF for about 10-12 minutes, but YMMV.
  • Right when the pizza comes out of the oven, sprinkle a little bit of lemon juice over the top.
  • Let sit for ~5 minutes, then eat it.  All of it.  Immediately.
At my request, my wife is making this again for my birthday (right now).  I'm so excited... :D

3/4 cup butter
2 cup sugar
2 eggs
1/2 cup dark molasses
4 cups flour
2 tsp baking soda
2 tsp each cinnamon, clove, ginger

preheat oven 375. cream the crisco, butter and sugar. add the rest
gradually.  drop tspfuls on ungreased cookie sheet.  use glass dipped
in sugar to press cookies flat.  12 mins.

OK Im cooking for the group this weekend.  I need something for a group of 6-7 people who could do with less salt and fat in their lives, and a side i can make for a vegetarian.  Possibly in a crockpot for ease of transport.  Thoughts?

Last night my wife made sweet chili tilapia with black beans and coconut rice (kinda Samoan flavors).  It was so so so good.  Make that.

Crockpot=stew

Beef, broth, veggies, and a grain.  Add in greens like spinach as well.  The grain, I prefer orzo, but potatoes works as well.  Soups/stews like this end up with less salt and fat than what they taste like (but only day of, after that it takes more salt to make it taste good, thanks to the pasta).  Seasonings make it work better.

Or, roast.  But that might be too fatty.

Last night I had something....odd.  See, my parents have a friend who's really into molecular gastronomy (which, for those who don't really know, is food with the love taken out of it and replaced by science).  He made creme anglaise, cactus fruit syrup, and carbonated dragonfruit dessert.  Of course, he couldn't make the creme anglaise the normal way, and used an immersion circulator.

In other news, for those of you(us) in the US, turkey day is coming up!  Which means food!  And probably some odd food as well!  Do you guys have any favorite dishes?  Or any ideas for what you want to make?
