A 10th level Ur-Priest can steal an SLA.

The Warding ability of an Initiate of the Sevenfold Veils is a spell-like ability, but on its own doesn't do anything except provide concealment, though it does state the Iot7FV can imbue it with "a warding that she knows."

The Veils which add abilities to the Warding have no descriptor type listed.  Would it be safe to assume they are also SLA's?  If a Ur-Priest steals a Warding, does he get a veil to go with it?

Veils explicitly is not an SLA, calling it such is a house rule and not an assumption.

Like a Barbarian's Illiteracy, Bard's Bardic Knowledge, Cleric's Bonus Languages, Paladin's Code of Conduct, Rogue's Trapfinding, and of course all Class-granted Spellcasting. These are untyped traits best classified as simply "Class Features". Which is exactly the role of Veils is to Wardings. There is a premise there, can you see it?
