Alright, here is the basic rule:

"Any creature that has spell resistance may use it in place of their armor class against any attack made as part of a spell or spell-like ability. In addition, they may also use their spell resistance in place of their armor class against any creature or object created, summoned, or called by a spell or spell-like ability.

This applies even if a spell or spell-like ability specifies that spell resistance does not apply to it."

Seems likely to work better as an overall spell system reworking, as it is, it mainly penalizes touch spells and summoned creatures, of which the former wasn't all that hot to begin with. And in either case SR doesn't scale comparably to attack bonus.
Everything is edible. Just that there are things only edible once per lifetime.

I did it more for creatures with low touch AC and to, for example, defend against big penalties to AC.

And, of course, so golems can have a literally infinite AC against spells.
