Shock Trooper takes BAB +6, which you don't have at 6th level, so swap it and Leadership.  Otherwise, looks good to me.

In terms of mounts, I was thinking of making my cohort a druid that focuses on wildshaping...are there any other PrCs I should think about other than Master of Many Forms and Warshaper? I presume I won't get the same flaw/feat exchange or the same stat rolling rules, but I think I can still make an interesting mount(s) out of my cohort regardless! :D

Nature's Warrior is pretty tasty too if you can work Track in somewhere.  After level 5 all the NW levels stack with druid and other WS classes to determine HD, sizes, types and frequency.  Plus pick 3 armaments, like DR 3/-, Fast Healing 1 and constrict.   :smirk
