Outsiders are a pretty good choice, some have great stat averages vs. their HD
Jariliths (MM2) are pretty goodhow many HD were you looking at? That'll help narrow things down
Things with lots of natural armor make good Zombies. Things with lots of attacks make good Skeletons, and things with one big attack make good Zombies. Things that have Ex flight make good Zombies. Thoqquas make good Skeletons (they'd make good Zombies too, but doubling their HD would take up more of your control pool). Most things make better Skeletons than Zombies.

This, plus the burrowing that leaves a usable tunnel . I don't think they keep their tremorsense though, because it's not a special quality that improves attacks.
