Also I'm adding a fe new hamsters for giggles sake, such as the Wrasslin' Hamster.  Mostly inspired by my sisters pets who used to sumo wrestle for possession over the honey coated granola treats.

Are these WWE Wrasslin' giant space hamsters or Luchador giant space hamsters?
I'm seeing way too much disturbing potential for both, particularly after Emperor Ralph.

Okay the "basic" garden variety Giant Space Hamster is done but for fluff and CR, unless anyone disagrees over their abilities or wants new options added.

The more powerful Hamsters and teh  Tyrannohamsterus have skeletal entries up.  Once I get them done Rupert is up.

Not directly.
For me the attraction of something like giant space hamsters is just wallowing in the absurdity and crafting add-ons to the base concept, like your wrasslin' GSH's, and then my suggestion of lucha GSH's.
So after whatever variants you make, I'd look at things like tagging in GSH's as animal companions, (miniatures as) familiar, Habitrail inspired wondrous architecture (or PF downtime room components or kingdom builder elements, and similar insanity.
Of course that turns it into more of a general project than a one-off.

So . . . whatever you've got, I'll just have fun with.

I've been doing some 5e conversions of the critters in this thread, as well as some stat blocks for advanced versions of things. doc linked over in my homebrew thread

The Goblin Bear went over pretty well, though probably one of the least absurd, other than naming.
3 e6 gestalt PCs handled it nicely. The Mystic//Wizard blew his load twice on full lethal strikes as it was looking like the Paladin was rather threatened... which is a good thing.

Okay the first batch posted now has it's hopefully amusing fluff, and negotiable CR.  Except the Hamsters.  Now that I have translated their abilities from 2e, some are very obviously worth more than others, so I need to tweak them.  Then it's on to dragons and the round 2 critters.

No theres a Baldur's Gate guy named Minsc I think who is clearly whacko, and has a miniature space hammie named Boo, whom he swears talks to him.'

I'm not sure if that's better or worse . . .

The others look fun. Now I need an excuse to introduce them to my campaign.
Maybe a random event with gnome hamster ranchers looking to settle in the PCs kingdom. I'm sure nothing bad could come of that . . .

Plus it'll be lots more fun to stat out.

Would you prefer I try to balance them out or just note by individual breeds "+1 CR" or something to that effect.

I think just "+1 CR" or whatever is enough.
It's not like gnomes breeding giant space hamsters are particularly balanced anyway.  ;)
